German Baked Eggs

Ok, this recipe is nothing short of amazing.  Each time I make it for a group, an event…my husband, I get rave reviews.  This past week we celebrated my Mom’s birthday with a weekend-long celebration with family and friends.  The final meal of the weekend was one of my favorites, brunch.  My mom, who has had this delight before, asked me to make it for the group.  It is actually a recipe from my Mother-In-Law that she makes each year for Christmas.  It is large enough to feed a group, and incorporates all the major brunch staples; eggs, cheese, and hash browns.  The cottage cheese helps keep the casserole light and fluffy, and its great with some ketchup!  To all my family members that ate this last weekend, here’s your recipe!

German Baked Eggs


  • 12 Eggs
  • 1 stick of butter
  • 16 oz cottage cheese
  • 16 oz monteray jack cheese
  • 16 oz frozen hash browns
  • 1 tsp baking powder
  • 1/4 cup flour
  • salt & pepper

Preheat the oven to 350 degrees.  Crack the eggs into a large mixing bowl and whisk together.

Add stick of melted butter to the eggs.

Add cottage cheese.

Add cheese.

Add flour and baking powder.

Add hash browns.

Place mixture in a greased 9×13 dish.

Bake for 50 minutes to 1 hour and ENJOY!!
